@genmaicha ive only had borsht with buttermilk and that combo freaked me out, wasnt a fan. I bet I'd love a superior borsht though.

usually borscht is served with a spoonful of sour cream mixed into the individual bowl, i.e. not mixed into the whole pot.

here's a recipe you can try. if you want the vegetarian version, just skip the steps involving beef and use vegetable stock instead. it's a lot of work and you'll probably cut your fingers at least once.

Ingredients
1. 1 lb beef (stew meat, sirloin, something with bones, ...)
2. 14 cups cold water
3. 1 tbsp salt
4. 2 - 3 med or large beets, washed, peeled and grated
5. olive oil
6. 1 tbsp vinegar
7. 3 tbsp ketchup
8. 1 tbsp unsalted butter
9. 1 med onion, finely diced
10. 2 carrots, grated
11. 2 - 3 medium or large potatoes, sliced
12. 1/2 small head of cabbage, sliced
13. 2 tomatoes, diced
14. 2 bay leaves
15. 1/4 tsp black pepper
16. 1/4 cup chopped parsley
17. 2 cloves garlic, pressed
18. dill (for serving)
19. sour cream (for serving)

Steps
1. combine meat, salt and water, bring to a boil, remove the foam ASAP
2. turn liquid down to a simmer and partially cover for 45m - 1h
3. saute beets with vinegar in olive oil on medium high for 5 minutes
4. add ketchup and simmer on med to low for 10 mins
5. remove beets and saute onions in butter for 2 min
6. add grated carrots and saute for 5 minutes or until soft
- add more oil if necessary
- it's fine if carrots burn/brown some
7. after soup has been boiling 45m, add in potatoes and cook 10m
8. then add cabbage, tomatoes and sauteed stuff and cook till potatoes are soft
9. add bay leaves, pepper, and salt to taste
10. remove from heat
11. add parsley and pressed garlic
12. cover pot and sit for 20 minutes
